The Challenge
Establishing a nightlife and dining destination from the ground up for young entrepreneurs who sought to bring the sophistication of modern Japanese cuisine to Northern Israel. The challenge was to create Japanese "street food" at a chef-restaurant level—moving away from the cliché sushi menu and instead specializing in traditional cooking techniques that demand high skill and precision with raw ingredients.

The Solution
"A La Carte" crafted a menu centered on "the cook’s touch," built upon four professional pillars:

Ramen & Deep Broths: Developing rich, slow-cooked broths that serve as the foundation for the Ramen dishes, with meticulous attention to noodle texture and toppings.

Handmade Gyoza: Creating a production system for dumplings with sophisticated fillings, emphasizing the perfect sear and precise dough consistency.

Japanese Grill (Robata): Implementing open-fire cooking to provide dishes with the authentic charred flavor and depth characteristic of traditional Japanese cuisine.

Wok Station: Mastering high-temperature stir-fry techniques to create noodle dishes that combine complex textures and intense umami flavors.

The Result
FUNKY has become a true pilgrimage site, redefining Asian cuisine in the North. The venue has gained widespread recognition for its culinary boldness and its ability to serve sophisticated Japanese food in a young and vibrant format.
